Our
laboratory is well equipped to conduct physical and chemical studies on food
systems. We have state-of-the-art controlled stress rheometers which enable us
to study rheological properties of food biopolymer systems, texture analyzer,
modulated differential scanning calorimeter, gas & liquid chromatography
systems, Low resolution NMR, Rapid ViscoAnalyzer to study pasting properties of
starch, apparatus for intrinsic viscosity measurement, UV curing machine,
tensile tester, FTIR, etc. Other facilities, such as particle size analyzer
(Malvern) are available in the School of Pharmacy, wide-angle x-ray
diffactometer in the School of Physics, and microscopy facilities in the School
of Biology
